Peanut Butter Chickpea Curry

The humble chickpea steps into the spotlight in this deliciously comforting meat-free curry. Use Simply Nuts peanut butter to really make the sauce sing!

What you need

2 tbsp oil

1 red onion, sliced

1/2 tsp paprika

½ tsp cayenne pepper

½ tsp ground coriander

1 large chilli, seeds removed finely chopped

400g can of coconut milk

4 tbsp Bega Simply Nuts Smooth Peanut Butter

1/2 cup tomato puree

2 400g tins of chickpeas, drained

3/4 cup vegetable stock

1 lime, juiced

1 cup spinach (optional)

Rice to serve

Coriander to garnish

Instructions

Step 1.

Heat the oil in a large pan over medium heat. Add the red onion and cook for 5 minutes until softened.

Step 2.

Add the paprika, cayenne pepper, ground coriander and chilli. Stir well until combined with the onion.

Step 3.

Add the coconut milk, peanut butter, tomato puree, drained chickpeas, vegetable stock and the juice of 1 lime. Cook on a medium to high heat for 10-15 minutes until it starts to thicken. Season to taste.

Step 4.

Take off the heat and stir through the spinach to wilt (if using).

Step 5.

Serve with rice and garnish with coriander.
